Someone should take a survey here on the Forum, personally I believe you'll find most V8 Convertors are old farts like myself (probably not as old as me, but pretty mature). They didn't care about 1/4 mile drag racing, but bringing out the true exotic all around performance. Sure they still want quick aceleration, but having the quickest quarter mile ET wasn't on their list. Also entered into this equation is that they wanted reliable horsepower with durability and no fuss maintainence. I've heard of a least 6 3800SC's having to be torn down due to failures just in the last 12 months, and only 1 SBC V8. Even if I'm not entirely correct about those numbers do a percentage comparison between the number of SBC running to the 3800SC.....pretty significant difference.
Could the SBC in a Fiero be the lowest ET Title holder here on the Forum, sure it could if someone who's purpose minded enough to make it happen. It will take some custom parts and the proper chassis setup to make this happen in mid-engine configuration. Is it a smart thing to do?....probably not, the Fiero can do much more better than just running in a straight line. I agree with you that if Quarter Mile is 'your bag' the Fiero is a poor choice, it would be better to pick out a lighter car and purpose build it.
Another expense is the required safety equipment for machines running quicker than 12 second ET's. Don and FieroX will be crossing this bridge pretty soon if they continue to post sub 12 runs.
I didn't take my car to Milan for numerous reasons, one being it's not setup for quick ET. If I want to turn a real quick quarter, all I have to do is jump on my old '85 Ninja ZX900 with F1 Engine and run a 9.65 quarter @ 136mph, or my '95 Ninja ZX7R and run low 10's, that gets my adrenalin following. In comparison my GT is very slow. If I really need more of a 'rush' I can always get a physical, fly to LA and drive my cousins '65 GTO Alcohol Drag car that turns 8.50 @ 150mph (after I pass their requirements).
On the other hand, you Quarter Mile minded people need to get your car out onto a Road Course. It's an incredible experience, one that I wish I had explored many years ago. The personal rewards of this experience out-shines 1/4 mile like you wouldn't believe. You can also set a car up without burning a real big hole in your pocket, that will perform very well on the track. Take advantage of the true potential of these little cars.
Of course that's just my opinion, I could be wrong.
