Hey guys,
Is it normal for the pressure gauge to bounce at idle?
I need to replace the oil pressure sensor correct to remedy this issue?

No. Oil pressure should be fairly constant w/in ranges below... V6, VIN-9, 30-45 PSIG L4, VIN-R, 36-41 PSIG
If very cold, can see higher pressure until engine warms up. Side note: Fuel Pump and cold weather can keep pump on if engine run but isn't warm. This cause by thick cold oil and can take 1 or 2 minutes for OP sender switch to shut off. See my Cave, Oil and Filter
Don't trust dash gauge. check w/ mechanical gauge. Bounce can be anything or several things in the engine or wiring for gauge or anywhere else. Even iffy ground(s) anywhere in the car.
If you replace the sender... See my Cave, Oil Sensor You have 88 but read TSB there. 88 sender and plug is Not "Water Proof" only "Weather Resistance" and even a ebow installed so plug doesn't point up on V6 w/ AC can help them to last a long time. Thin Coat of silicon or brake grease can help too.
put year and engine in every post. most don't keep track of engine etc.

You didn't state what year or engine, but if its the 85-87 V6, the connector on the sending unit is notorious for having a bad connection. Take the connector off, clean all terminals on the sender and plug really good, then re-attach and see if the needle stops bouncing.
While you're there, you also want to check to make sure the sending unit is not leaking oil, they are known for that as well.
Last, you can upgrade to 1988 sender and connector, see Orge's website above for that info...[This message has been edited by Skybax (edited 05-17-2021).]
