I'm pretty sure the gray is how it comes out of the mold.
The one's I've seen painted were satin black like the mirrors/trim.

I also tend to think it varied somewhat. Some were darker, some were a little lighter.

All of the undersides of the Fiero decklids that I have seen have been painted satin black.

In 1988, the deck lid was modified to act as an RF shield. Previous years had a metal part attached to the deck lid. I am not sure how this was accomplished, but it could be a coating was applied in the molding process, and thus the gray appearance.

My Indy hood and decklid were painted satin black underneath.
My 87 GT is (unpainted?) gray on both...

I think somewhere along the way a "bean counter" pointed out it's not really needed.

Oreilly auto parts sells Marhyde satin black trim paint. A couple of years ago the can actually had a Fiero on it. Its the best I've found so far.

The Marhyde is a very good color match, but it does not hold up well on exterior mouldings, mirrors, etc.
On the underside of a decklid, it might be ok.
