My '84 2m4 has been sitting for many, many, years and as such needs many lines replaced. So im wondering, what are these systems that these lines are connected to, what type/category of lines will I need to replace in these pictures, and where I can possibly get them. Thanks!

You should be able to source those vacuum lines from your local auto parts store. I.e. AutoZone, O'Rielly, Advance Auto, NAPA, etc. Just bring a short sample of the line you plan on replacing. They should be able to help you.

All the different lines you see under the hood are mostly vacuum lines, going to the evaporative emissions system, cruise control, etc. There should be a sticker under your decklid with a diagram showing where most of them go to and from.
You can buy bulk hose at most auto parts stores. Get 5 feet of the 3 smallest sizes, that should cover them all.

Just take "dead" vac lines to local part store and match them.
Most are only 1 of 2 sizes. But may need more then OE hose because some OE parts are preformed to bend in short spans. Cruise is one w/ some of this. "normal" hose will close up bending to tight so need more to bend w/o kinking.
