Neil, as you can see in the first few pages of this thread, quite a few photos are missing in this thread (due to an image server suddenly disappearing without a trace). So do you still have those old photo's? If so, I would like to help you repost those images.
Because since that takes quite some effort (all which takes away time from your project), you can also zip up all photos you have and send them to me (through WeTransfer for instance). And I will sort out all the images and repost them in the proper threads.
Let me know if that's something you can do!

Thank you for moving this thread to the Construction Zone, Cliff! I definitely have all the photos. Unfortunately I have taken several thousand photos so it may be a while for me to go through them and track them all down. I don't mind getting this fixed up. I will definitely take some time to get this done. I'll also try to post a little more often!

Sorry for the late reply Bob, I've been away a lot since the summer and wasn't paying attention.
Yes, that dash is definitely not OEM. The main screen is a just a generic 10" LCD display. I'm using a small profile, fanless, mini-computer (I forget all the specs) to run the dash software. I wrote the majority of the software a few years ago. I still have a little more programming to do to finish it up... and make it run a little more efficiently. The two side displays are 4" square TFT displays. They have their own drivers, and are each linked to Arduinos. The graphics for the little displays was flashed directly to their memories (that was a steep learning curve to get that done). Then I did a lot of 3d printing to create the bezels. That's good advice. I never thought to use exterior house paint, but I will be using an epoxy sealer on anything that is exposed.
