Both of my doors are sagging to the point that they are digging little 'trails' in the GFX.

How do I adjust them back up so they close/open all nice and easy?

You more than likely have worn hinges on your doors. Several people sell a repair kit to fix them (Fiero store or Rodney Dickman) or you can try the Help section of your local auto parts store. I think the S-10 hinge repair kit will work.

how can i tell if they are worn out and need to be replaced?

Open the door slightly, grab the bottom and lift up and down. If you feel looseness, your hinges need to be rebuilt.
