Aeromotive has a fuel pressure regulator that will allow you to use the stock, high pressure FI fuel pump while running a carb. No need to drop the tank!

I did something similar to that- I'm running a stock V6 pump on my carbed V8 for 2 reasons: 1. The pump has less than 2500 miles on it, and 2. I didn't want to drop the tank.

I ran the line up to a tee fitting. On one side, I have a Holley fuel pressure regulator, on the other side, a return line to the tank with a needle valve. I have a gauge on the tee, and another one on the line from the regulator to the carb. I turned on the pump and adjusted the needle valve until I got 15 PSI at the tee. I then adjusted the regulator down to 6-7 PSI at the carb. Was very easy and cost about $5.00 (I had the regulator and some of the fittings already).

I looked for something like that when the rubber hose inside the tank split and I lost pressure. I wound up useing a brass tee that I fitted a jet into and drilling the jet till I got 7 lbs of pressure. That was about 3 years back so I guess it can be said it works.

I tried using a plug that I kept increasing the hole size on, but couldn't find the right size. That's when I hit upon the needle valve setup.

Good job. Actually all that is required is that it bypass any fuel that gets above a specific psi and send it back to the tank. Neat idea huh?
