I have an '84 set up for SCCA ITB racing. Weight reduction includes - no carpet, no center console, no headliner, sunroof glass replaced by thin steel panel, power nothing, no pass. seat or belts, aluminum race seat, hood/trunk latches replaced with hood pins, front and rear trunks gutted, no inside door panels, no spare/jack, no driver side window glass, rear window replaced with lexan, no a/c compressor/evaporator/etc., no heater core, no HVAC blower motor, no stereo, no instrument cluster (has a few gauges in fabricated aluminum panel), straight through exhaust system (purple hornies). All this probably saves about 250-300 lbs. and makes the car very Spartan and tolerable on the street only for short stints due to the noise, wind, and lack of HVAC. It used to have no rad fan (which many racer remove), but I put that back in because car is street driven.
One thing you can do to save significant weight where it counts is get some small and very light wheels.
I used to have a first gen MR2 and it is the same way - it weighs a lot more than you'd think for a small car. but someone did manage to get one down to 2000 lbs. by taking out everything unnecessary and replacing several body panels with thin plastic.
