My current sunroof car (87 MERA) only has one. My previous F308 rebody with a sun roof also used one clip/shim per side.

take a peace of paper, regular copy paper, set in under the roof when you get it all put in. close it and latch it, if you can do that and the paper is so tight to can't get it out try it in another spot and another spot all the way around the glass. if it is tight in all the places then its fine.

If its to tight to latch the glass you don't have enough shims, if its so lose the paper pulls out easily you have to many.

or maybe its the other way around, I forget. last test take a garden hose with no sprayer on it and run some water over it, if it leaks its to lose, if it doesn't its just right.

I suspect Jonathan was referring to the single latch at the back of the sunroof and not the two hinges at the front of the panel.

IMO the clamping force required has got more to do with eliminating wind noise (when closed) than keeping water out. Considering that a sunroof with functional drain holes doesn't leak water in the rain with the sunroof panel flipped open, I don't think a hose test with the panel closed will mean all that much (except maybe demonstrate that the drain holes are either plugged or non-existent).
