Tonight I wanted to make pancakes for dinner as a change. When I went to the pantry, I found that my trusty Bisquick box only had 1 cup left. The recipe calls for 2 cups for a batch of pancakes and I couldn't do half a batch because it would not be enough for everyone to eat. My family has always made pancakes with Bisquick. I grew up eating them and I think my dad did too. The only time I ever had anything different was at IHOP of Denny's.

So, I looked up a simple pancake recipe on the interwebs and made pancakes from scratch. OMG!!! I could tell they were going to be good just from the smell as they were cooking. After everyone had tried the new pancakes, it was agreed we would stick with that recipe and never make pancakes from Bisquick anymore. Now that I think about it, the Bisquick pancakes taste more like pancake shaped biscuits.

If you are like me and have always had Bisquick (or Krusteaz, or Kodiak, or any other instant mix) pancakes, try making them from scratch. It is not that much harder and the results are 10X better.

In a pinch time related or on a trip I will use the Krustez pancake mix. Otherwise I use the recipe I've eaten since I was a kid from my Mom's ancient Betty Crocker Cook Book. Complete with the instructions on how to sour milk if you don't have buttermilk available.

I used Martha Stewart's Basic pancakes recipe. I am sure there are much more intricate recipes out there but I just wanted something quick and easy. I added a little vanilla extract and cinnamon.
